Bulgur Wheat and Date Salad

This bulgur wheat and date salad offers a delightful combination of sweet dates, crunchy walnuts, and fresh parsley. It’s a nutritious and satisfying salad that’s perfect for a light lunch or a side dish.

INGREDIENTS

  • 1 cup bulgur wheat
  • 2 cups water
  • 1/2 cup dates, chopped
  • 1/2 cup walnuts, chopped
  • 1/2 cup parsley, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste

INSTRUCTIONS

  1. In a saucepan, bring water to a boil. Add bulgur wheat, cover, and simmer for 12 minutes until water is absorbed and bulgur is tender. Let it cool.
  2. In a large bowl, combine cooked bulgur, dates, walnuts, parsley, and red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, cumin, salt, and black pepper.
  4. Pour dressing over salad and toss to combine.
  5. Chill before serving to allow flavors to meld.
