Roasted Beet and Goat Cheese Salad

This roasted beet and goat cheese salad is a delightful combination of sweet, tangy, and savory flavors. The roasted beets and creamy goat cheese make it a gourmet salad that’s perfect for any occasion.

INGREDIENTS

  • 4 medium beets, peeled and cut into wedges
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 100g goat cheese, crumbled
  • 1/4 cup walnuts, toasted
  • 2 cups mixed greens
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey

INSTRUCTIONS

  1. Preheat oven to 200°C (400°F). Toss beet wedges with olive oil, salt, and black pepper, and spread on a baking sheet.
  2. Roast beets for 35-40 minutes, until tender and caramelized.
  3. In a large bowl, combine mixed greens with roasted beets, goat cheese, and toasted walnuts.
  4. In a small bowl, whisk together balsamic vinegar and honey. Drizzle over the salad and toss gently to combine.
  5. Serve immediately for a flavorful and elegant salad.
