Quinoa and Black Bean Salad

This quinoa and black bean salad is a hearty and nutritious option, full of protein and fresh flavors. It’s a great choice for a satisfying lunch or a side dish at dinner.

INGREDIENTS

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 can (400g) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp ground cumin
  • Salt and black pepper to taste

INSTRUCTIONS

  1. In a saucepan, bring water to a boil. Add quinoa, reduce heat, and simmer for 15 minutes, or until quinoa is cooked and water is absorbed. Let it cool.
  2. In a large bowl, combine cooked quinoa, black beans, bell pepper, corn, red onion, and cilantro.
  3. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and black pepper.
  4. Pour dressing over salad and toss to combine.
  5. Chill before serving for best flavor.
