Mediterranean Chickpea Salad

This Mediterranean chickpea salad is vibrant and refreshing, packed with fresh vegetables and feta cheese. It’s perfect as a light lunch or a healthy side dish.

INGREDIENTS

  • 1 can (400g) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and black pepper to taste

INSTRUCTIONS

  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and black pepper.
  3. Pour dressing over salad and toss gently to combine.
  4. Chill in the refrigerator for at least 15 minutes before serving.
