Lentil and Vegetable Curry

This lentil and vegetable curry is a comforting and nutritious dish. Full of flavor and hearty ingredients, it’s a great option for a filling meal that’s easy to prepare.

INGREDIENTS

  • 1 cup red lentils, rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 cup diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped potatoes
  • 2 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh cilantro for garnish

INSTRUCTIONS

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
  2. Add curry powder, cumin, and coriander, and cook for another minute.
  3. Stir in diced tomatoes, carrots, potatoes, and lentils. Pour in vegetable broth and bring to a boil.
  4. Reduce heat and simmer for 25-30 minutes, or until lentils and vegetables are tender.
  5. Season with salt and black pepper. Garnish with fresh cilantro before serving. Enjoy with rice or naan bread.
