Garlic Herb Roasted Potatoes

These garlic herb roasted potatoes are a simple yet flavorful side dish. The combination of garlic, rosemary, and thyme adds a delicious touch to perfectly roasted baby potatoes.

INGREDIENTS

  • 500g baby potatoes, halved
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

INSTRUCTIONS

  1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. In a large bowl, toss potatoes with olive oil, garlic, rosemary, thyme, salt, and black pepper.
  3. Spread potatoes in a single layer on the prepared baking sheet.
  4. Roast for 30-40 minutes, or until potatoes are golden brown and tender, stirring halfway through.
  5. Garnish with fresh parsley before serving.
