Chicken and Vegetable Skewers

These chicken and vegetable skewers are a delicious and healthy option for a summer BBQ or a quick weeknight meal. The marinade adds a flavorful touch to the tender chicken and crisp vegetables.

INGREDIENTS

  • 500g chicken breast, cut into cubes
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 1 zucchini, sliced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Wooden skewers, soaked in water

INSTRUCTIONS

  1. In a bowl, mix olive oil, lemon juice, oregano, thyme, salt, and black pepper.
  2. Add chicken cubes to the marinade and toss to coat. Marinate for at least 30 minutes.
  3. Thread chicken and vegetables onto skewers, alternating between chicken and vegetables.
  4. Preheat grill or grill pan over medium-high heat.
  5. Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.
  6. Serve warm with a side of rice or a fresh salad.
