Vegetable Stir-Fry with Tofu

This vegetable stir-fry with tofu is a quick and healthy dish, packed with colorful veggies and savory flavors. Perfect for a weeknight dinner.

INGREDIENTS

  • 1 block (about 300g) firm tofu, drained and cubed
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame seeds

INSTRUCTIONS

  1. In a large skillet or wok, heat vegetable oil over medium-high heat.
  2. Add tofu cubes and cook until golden brown on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add sesame oil, garlic, and ginger. Stir-fry for 1 minute.
  4. Add bell pepper, broccoli, snap peas, and carrots. Stir-fry for 5-7 minutes, or until vegetables are tender-crisp.
  5. Return tofu to the skillet and add soy sauce and hoisin sauce. Stir well to coat everything evenly.
  6. Cook for an additional 2 minutes, then sprinkle with sesame seeds before serving.
