Pumpkin Spice Cake

This pumpkin spice cake is moist and full of warm spices, making it a perfect treat for autumn or any time you crave a cozy dessert.

INGREDIENTS

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract

INSTRUCTIONS

  1. Preheat oven to 180°C (350°F). Grease and flour a 9-inch round cake pan.
  2. In a bowl, mix flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, whisk together oil, pumpkin puree, eggs, and vanilla extract.
  4. Gradually add dry ingredients to the wet ingredients, mixing until just combined.
  5. Pour batter into the prepared cake pan.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Frost if desired.
