Cinnamon Apple Muffins

These cinnamon apple muffins are soft and flavorful, with a hint of spice and chunks of fresh apple. Perfect for breakfast or a sweet snack.

INGREDIENTS

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup peeled and chopped apple

INSTRUCTIONS

  1. Preheat oven to 180°C (350°F). Line a muffin tin with paper liners.
  2. In a large bowl, combine flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together melted butter, milk, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in chopped apple.
  6. Spoon batter into the muffin tin, filling each cup about 3/4 full.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
