Berry Cheesecake Bars

These berry cheesecake bars are a delicious and easy dessert, combining a buttery graham cracker crust with creamy cheesecake and fresh berries.

INGREDIENTS

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 500g cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup mixed berries (fresh or frozen)

INSTRUCTIONS

  1. Preheat oven to 175°C (350°F). Grease a 9x13-inch baking pan.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the prepared pan to form a crust.
  3. In a large bowl, beat cream cheese until smooth. Add sugar and beat until creamy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Spread cream cheese mixture over the crust.
  6. Drop berries evenly over the top, gently pressing them into the filling.
  7. Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
  8. Cool completely before cutting into bars and serving.
