INGREDIENTS

  • 2 cups sweetened shredded coconut
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 2 large egg whites
  • 1/2 tsp vanilla extract
  • Pinch of salt

INSTRUCTIONS

  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. In a large bowl, combine shredded coconut, sugar, flour, and salt.
  3. In another bowl, beat egg whites until stiff peaks form. Gently fold egg whites into the coconut mixture until well combined.
  4. Drop spoonfuls of the mixture onto the prepared baking sheet.
  5. Bake for 20-25 minutes, or until the edges are golden brown.
  6. Let cool completely on a wire rack before serving.
