Spicy Lentil Soup

This spicy lentil soup is hearty and flavorful, with a kick from spices. It’s perfect for a filling and warming meal.

INGREDIENTS

  • 1 cup dried red lentils, rinsed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large carrot, diced
  • 1 celery stalk, diced
  • 1 can diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper (optional)
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and black pepper to taste

INSTRUCTIONS

  1. In a large pot, heat olive oil over medium heat. Add onion, carrot, and celery. Cook until vegetables are softened.
  2. Add garlic, cumin, smoked paprika, turmeric, and cayenne pepper (if using). Cook for 1 minute until fragrant.
  3. Stir in lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes, or until lentils are tender.
  4. Season with salt and black pepper to taste. Serve hot.
