Classic Tomato Soup

This classic tomato soup is comforting and flavorful, perfect for a cozy meal. The addition of cream makes it extra rich and smooth.

INGREDIENTS

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can (400g) diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp dried basil
  • 1/2 tsp sugar
  • Salt and black pepper to taste
  • 1/2 cup heavy cream (optional)

INSTRUCTIONS

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in diced tomatoes, vegetable broth, basil, sugar, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Use an immersion blender to puree the soup until smooth. (Alternatively, carefully transfer the soup in batches to a blender.)
  5. Stir in heavy cream if using, and adjust seasoning as needed. Serve hot.
