Vegetarian Lentil Soup

This vegetarian lentil soup is hearty and packed with flavor. It’s perfect for a cozy meal and provides a great source of protein and fiber.

INGREDIENTS

  • 1 cup dried green or brown lentils, rinsed
  • 1 large carrot, diced
  • 1 celery stalk, diced
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp ground cumin
  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and black pepper to taste

INSTRUCTIONS

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Cook until vegetables are softened.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in lentils, diced tomatoes, thyme, cumin, salt, and black pepper.
  4. Add vegetable broth and bring to a boil. Reduce heat and simmer for 30 minutes, or until lentils are tender.
  5. Adjust seasoning to taste and serve hot.
