Butternut Squash and Kale Salad

This butternut squash and kale salad is a flavorful and nutritious choice. The combination of roasted butternut squash, kale, and crunchy walnuts creates a satisfying and healthy dish.

INGREDIENTS

  • 1 small butternut squash, peeled and diced
  • 2 tbsp olive oil
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • Salt and black pepper to taste
  • 4 cups kale, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • 1/4 cup walnuts, chopped
  • 2 tbsp balsamic vinaigrette

INSTRUCTIONS

  1. Preheat oven to 200°C (400°F). Toss butternut squash with olive oil, cinnamon, nutmeg, salt, and black pepper. Spread on a baking sheet.
  2. Roast for 25-30 minutes, or until tender and lightly caramelized.
  3. In a large bowl, combine roasted butternut squash, kale, dried cranberries, feta cheese, and walnuts.
  4. Drizzle with balsamic vinaigrette and toss to combine.
  5. Serve immediately.
