Sweet Potato and Black Bean Tacos

These sweet potato and black bean tacos are a tasty and nutritious vegetarian option. The combination of sweet potatoes and black beans provides a satisfying and flavorful filling.

INGREDIENTS

  • 2 large sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and black pepper to taste
  • 8 small tortillas
  • Chopped fresh cilantro for garnish
  • Optional toppings: avocado, sour cream, salsa

INSTRUCTIONS

  1. Preheat oven to 200°C (400°F). Toss sweet potato cubes with olive oil, cumin, smoked paprika, chili powder, salt, and black pepper. Spread on a baking sheet.
  2. Bake for 20-25 minutes, or until sweet potatoes are tender and lightly caramelized.
  3. Warm tortillas in a dry skillet or oven.
  4. To assemble tacos, fill each tortilla with roasted sweet potatoes, black beans, and any desired toppings.
  5. Garnish with chopped cilantro and serve immediately.
