Shrimp and Veggie Skewers

These shrimp and veggie skewers are a great option for a quick and healthy meal. The flavorful marinade enhances the shrimp and vegetables, making them perfect for grilling.

INGREDIENTS

  • 500g large shrimp, peeled and deveined
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 onion, cut into chunks
  • 1 zucchini, sliced
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp dried oregano
  • Salt and black pepper to taste

INSTRUCTIONS

  1. In a bowl, mix olive oil, soy sauce, honey, dried oregano, salt, and black pepper.
  2. Add shrimp and vegetables to the bowl and toss to coat.
  3. Thread shrimp and vegetables onto skewers, alternating them.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Grill skewers for 3-4 minutes per side, or until shrimp are cooked through and vegetables are tender.
  6. Serve immediately.
