INGREDIENTS

  • 6 large eggs
  • 1 cup milk
  • 1 cup mixed vegetables (e.g., bell peppers, tomatoes, zucchini), diced
  • 1/2 cup shredded cheese (e.g., cheddar or feta)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh herbs for garnish (optional)

INSTRUCTIONS

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, whisk together eggs, milk, salt, and black pepper.
  3. Heat olive oil in a skillet over medium heat. Add mixed vegetables and cook until tender.
  4. Pour the egg mixture over the vegetables and cook until edges begin to set, about 5 minutes.
  5. Sprinkle shredded cheese on top.
  6. Transfer skillet to the oven and bake for 15-20 minutes, or until frittata is fully set and golden brown.
  7. Garnish with fresh herbs if desired and serve warm.
