INGREDIENTS

  • 2 large flour tortillas
  • 1 cup fresh spinach
  • 1 cup mushrooms, sliced
  • 1/2 cup shredded cheese (e.g., cheddar or mozzarella)
  • 2 large eggs
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • 1/4 tsp garlic powder (optional)

INSTRUCTIONS

  1. Heat olive oil in a skillet over medium heat. Add mushrooms and cook until tender.
  2. Add spinach and cook until wilted. Season with salt, black pepper, and garlic powder if using.
  3. In a separate bowl, whisk eggs and pour them into the skillet. Scramble with the mushrooms and spinach until cooked through.
