Banana Pancakes

INGREDIENTS

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 1 large egg
  • 1 ripe banana, mashed
  • 2 tbsp melted butter
  • Butter or oil for cooking
  • Maple syrup for serving

INSTRUCTIONS

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix buttermilk, egg, mashed banana, and melted butter.
  3. Add wet ingredients to dry ingredients and stir until just combined. Be careful not to overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour batter onto the skillet to form pancakes. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with maple syrup and your favorite toppings.
