Sweet Potato Hash with Eggs

This sweet potato hash with eggs is a hearty and flavorful breakfast that combines tender sweet potatoes with spiced vegetables and a perfectly cooked egg. It’s a satisfying and nutritious way to start your day.

INGREDIENTS

  • 2 large sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper to taste
  • 2 large eggs
  • Fresh parsley for garnish

INSTRUCTIONS

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sweet potatoes and cook, stirring occasionally, for about 10 minutes until they start to soften.
  3. Add red bell pepper and onion, and cook until vegetables are tender and lightly browned.
  4. Stir in paprika, cumin, salt, and black pepper. Cook for an additional 2 minutes.
  5. Make two wells in the hash and crack an egg into each well. Cover the skillet and cook until eggs are done to your liking.
  6. Garnish with fresh parsley and serve hot.
