Avocado Toast with Poached Eggs

This avocado toast with poached eggs is a delicious and nutritious breakfast that combines creamy avocado with perfectly poached eggs. It’s simple yet satisfying, ideal for starting your day right.

INGREDIENTS

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 tbsp white vinegar
  • Salt and black pepper to taste
  • Red pepper flakes (optional)
  • Fresh parsley for garnish

INSTRUCTIONS

  1. Toast the bread slices to your desired crispness.
  2. While the bread is toasting, bring a small pot of water to a gentle simmer. Add white vinegar.
  3. Crack each egg into a small bowl. Gently slide the eggs into the simmering water and cook for 3-4 minutes, until the whites are set but yolks are still runny. Remove with a slotted spoon and set aside.
  4. In a bowl, mash the avocado with a fork and season with salt and black pepper.
  5. Spread the mashed avocado evenly over the toasted bread slices.
  6. Top each slice with a poached egg.
  7. Sprinkle with red pepper flakes and garnish with fresh parsley before serving.
