Quinoa Salad with Avocado

Quinoa Salad with Avocado is a fresh and nutritious dish that’s perfect for a light lunch or side.

INGREDIENTS

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped red onion
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

INSTRUCTIONS

  1. In a pot, bring water to a boil. Add quinoa, reduce heat, and simmer for 15 minutes until water is absorbed and quinoa is tender.
  2. Let quinoa cool.
  3. In a bowl, combine cooled quinoa, avocado, cherry tomatoes, and red onion.
  4. Whisk olive oil and lemon juice together, then pour over salad.
  5. Toss to combine and season with salt and pepper.
  6. Serve chilled or at room temperature.
