Mediterranean Chickpea Salad

This Mediterranean chickpea salad is fresh, colorful, and packed with flavor. It’s a perfect side dish or light meal that’s both nutritious and satisfying.

INGREDIENTS

  • 1 can chickpeas (400g), drained and rinsed
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and black pepper to taste

INSTRUCTIONS

  1. In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, olives, and feta cheese.
  2. In a small bowl, whisk together olive oil, red wine vinegar, and dried oregano. Season with salt and black pepper to taste.
  3. Pour dressing over the salad and toss to combine.
  4. Serve immediately or chill in the refrigerator before serving.
