Stuffed Zucchini Boats

Stuffed Zucchini Boats are a versatile and healthy side dish, perfect for adding a burst of flavor to your meal.

INGREDIENTS

  • 4 medium zucchinis, halved lengthwise
  • 1 cup cooked quinoa
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh basil
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, mix cooked quinoa, tomatoes, basil, Parmesan cheese, salt, and pepper.
  3. Brush zucchini halves with olive oil and scoop out the center to create boats.
  4. Fill zucchini boats with quinoa mixture and place on a baking sheet.
  5. Bake for 20-25 minutes, or until zucchini is tender.
  6. Serve warm.
