Quinoa Salad

Quinoa Salad is a light and refreshing side dish that pairs well with any main course.

INGREDIENTS

  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

INSTRUCTIONS

  1. Rinse quinoa under cold water. In a pot, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed.
  2. Let quinoa cool, then combine with tomatoes, cucumber, and red onion. Toss with olive oil, lemon juice, salt, and pepper.
  3. Serve chilled or at room temperature.
