Roasted Vegetable Platter

A colorful and flavorful Roasted Vegetable Platter is perfect as an appetizer or side dish, bringing out the natural sweetness of the vegetables.

INGREDIENTS

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. Arrange vegetables on the baking sheet and drizzle with olive oil. Sprinkle with oregano, salt, and pepper.
  3. Roast for 25-30 minutes, until vegetables are tender and lightly browned.
  4. Serve warm or at room temperature.
