Stuffed Mini Bell Peppers

Stuffed Mini Bell Peppers are a delightful vegetarian snack. Filled with a creamy herb cheese mixture, they make a flavorful and attractive appetizer.

INGREDIENTS

  • 12 mini bell peppers
  • 1 cup cream cheese, softened
  • 1/4 cup finely chopped fresh herbs (e.g., parsley, chives)
  • 1/4 cup finely shredded cheddar cheese
  • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. Cut the tops off the mini bell peppers and remove the seeds.
  3. In a bowl, mix the cream cheese, herbs, cheddar cheese, salt, and pepper until well combined.
  4. Stuff each bell pepper with the cream cheese mixture.
  5. Place stuffed peppers on the baking sheet and bake for 10-15 minutes until the peppers are tender.
  6. Serve warm or at room temperature.
