Creamy Mushroom Risotto

Creamy Mushroom Risotto is a rich and comforting dish made with Arborio rice, sautéed mushrooms, and Parmesan cheese. It’s a luxurious main course that’s perfect for any special occasion.

INGREDIENTS

  • 1 cup Arborio rice
  • 200g mushrooms, sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 cup white wine
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste

INSTRUCTIONS

  1. In a large skillet, heat olive oil and butter over medium heat. Add onions and garlic, and cook until translucent.
  2. Add mushrooms and cook until softened.
  3. Stir in Arborio rice and cook for 1-2 minutes until lightly toasted.
  4. Deglaze the pan with white wine and cook until mostly absorbed.
  5. Add vegetable broth, one cup at a time, stirring frequently until liquid is absorbed and rice is creamy.
  6. Stir in Parmesan cheese and season with salt and pepper.
  7. Serve warm with additional Parmesan if desired.
