Mixed Green Salad with Fried Pecans and Dates is a blend of crunchy pecans, sweet dates, and tangy blue cheese over fresh greens. It’s a flavorful and satisfying salad that’s perfect for any occasion.

INGREDIENTS

  • 4 cups mixed greens (e.g., lettuce, spinach, arugula)
  • 1/2 cup pecans, toasted
  • 1/2 cup dates, pitted and sliced
  • 1/4 cup blue cheese, crumbled
  • 1/4 cup sliced cucumbers
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

INSTRUCTIONS

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add dates and cook until lightly caramelized, about 2-3 minutes. Remove from heat and set aside.
  2. In a large bowl, combine mixed greens, toasted pecans, sliced cucumbers, and crumbled blue cheese.
  3. In a small bowl, whisk together remaining olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  4. Drizzle dressing over salad and toss to coat.
  5. Top with fried dates and serve immediately.
