Spinach Salad with Fried Dates and CandyBird™ Almonds

Spinach Salad with Fried Dates and CandyBird™ Almonds is a delightful combination of tender spinach, crunchy CandyBird™ almonds, and sweet dates with a tangy dressing. It’s a refreshing and satisfying salad.

INGREDIENTS

  • 4 cups baby spinach
  • 1/2 cup CandyBird™ almonds, sliced and toasted
  • 1/2 cup dates, pitted and chopped
  • 1/4 cup red bell pepper, thinly sliced
  • 1/4 cup goat cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • Salt and pepper to taste

INSTRUCTIONS

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add chopped dates and cook for 2-3 minutes until slightly caramelized. Remove from heat and set aside.
  2. In a large bowl, combine baby spinach, toasted CandyBird™ almonds, red bell pepper, and crumbled goat cheese.
  3. In a small bowl, whisk together remaining olive oil, apple cider vinegar, honey, salt, and pepper.
  4. Drizzle dressing over salad and toss to combine.
  5. Top with fried dates and serve immediately.
