Lemon Garlic Shrimp Pasta

This lemon garlic shrimp pasta is a light and flavorful dish with succulent shrimp and a zesty lemon sauce. It’s a quick and easy meal that’s perfect for a weeknight dinner or special occasion.

INGREDIENTS

  • 300g pasta (e.g., spaghetti or fettuccine)
  • 500g large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 lemon, juiced and zested
  • 1/2 cup chicken broth
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • Grated Parmesan cheese (optional, for serving)

INSTRUCTIONS

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add shrimp and cook until pink and opaque, about 3-4 minutes per side.
  4. Stir in lemon juice, lemon zest, and chicken broth. Bring to a simmer and cook for 2 minutes.
  5. Add cooked pasta to the skillet and toss to combine with the shrimp and sauce.
  6. Season with salt and black pepper to taste.
  7. Garnish with fresh parsley and serve with grated Parmesan cheese if desired.
