Arugula Salad with Fried Dates and Walnuts

This Arugula Salad with Fried Dates and Walnuts combines the peppery bite of arugula with sweet dates, crunchy walnuts, and tangy feta. It’s a perfect mix of flavors and textures.

INGREDIENTS

  • 4 cups arugula
  • 1/2 cup walnuts, toasted
  • 1/2 cup dates, pitted and sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 red onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

INSTRUCTIONS

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add dates and cook until lightly caramelized, about 2-3 minutes. Remove from heat and set aside.
  2. In a large bowl, combine arugula, toasted walnuts, crumbled feta, and red onion.
  3. Drizzle with balsamic vinegar and remaining olive oil. Toss to coat.
  4. Top salad with fried dates and serve immediately.
