Coconut Curry Shrimp

Coconut Curry Shrimp is a creamy and spicy dish with a rich coconut flavor and aromatic curry spices. It’s a satisfying meal that pairs well with rice.

INGREDIENTS

  • 500g shrimp, peeled and deveined
  • 1 can (400ml) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 bell pepper, sliced
  • 1 tbsp fish sauce (or soy sauce for a vegetarian alternative)
  • Fresh cilantro for garnish
  • Salt and pepper to taste

INSTRUCTIONS

  1. In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Stir in curry paste and cook for 1 minute. Add coconut milk and fish sauce, and bring to a simmer.
  3. Add shrimp and cook for 5-7 minutes, or until pink and cooked through.
  4. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
  5. Serve over rice or with naan bread.
