Turkish Delight (Lokum)

Turkish Delight, or Lokum, is a chewy and sweet confection flavored with rosewater. It’s a traditional Turkish treat that’s perfect for sharing or enjoying with a cup of tea.

INGREDIENTS

  • 1 cup water
  • 1 cup granulated sugar
  • 1/2 cup cornstarch
  • 1/4 cup lemon juice
  • 1/4 tsp cream of tartar
  • 1 tsp rosewater (optional)
  • Powdered sugar for dusting

INSTRUCTIONS

  1. In a saucepan, combine water and sugar. Bring to a boil and simmer until the sugar dissolves.
  2. In another bowl, mix cornstarch with a small amount of water to make a slurry. Add to the boiling sugar mixture and stir well.
  3. Continue to cook over medium heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pan.
  4. Remove from heat and stir in lemon juice, cream of tartar, and rosewater if using.
  5. Pour mixture into a greased pan and let set at room temperature for at least 4 hours or overnight.
  6. Cut into small squares and dust with powdered sugar before serving.
