Turkish Rice Pudding (Sütlaç)

Turkish rice pudding, or Sütlaç, is a creamy and comforting dessert made with rice, milk, and a touch of vanilla. It’s often garnished with cinnamon for a warm, aromatic finish.

INGREDIENTS

  • 1/2 cup rice
  • 1 liter milk
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tsp vanilla extract
  • 1/4 cup water
  • Ground cinnamon for garnish

INSTRUCTIONS

  1. Rinse the rice under cold water. In a saucepan, combine rice and water and bring to a boil. Reduce heat and simmer for 10 minutes, until rice is tender.
  2. In another saucepan, heat milk and sugar until the sugar dissolves.
  3. Mix cornstarch with a small amount of cold milk to make a slurry, then stir into the warm milk. Cook, stirring constantly, until the mixture thickens.
  4. Add the cooked rice to the milk mixture and stir well. Cook for another 10 minutes, stirring frequently.
  5. Remove from heat and stir in vanilla extract.
  6. Pour pudding into serving dishes and let cool. Refrigerate for at least 4 hours.
  7. Before serving, sprinkle with ground cinnamon.
