Lemon Cheesecake Bars

These lemon cheesecake bars are a refreshing and tangy dessert, combining a buttery digestive biscuit crust with a creamy lemon cheesecake filling. Perfect for a sweet and citrusy treat.

INGREDIENTS

  • 1 cup crushed digestive biscuits
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter
  • 400g cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup lemon juice
  • 2 tbsp lemon zest

INSTRUCTIONS

  1. Preheat oven to 180°C (350°F). Mix crushed digestive biscuits with sugar and melted butter. Press into the bottom of a baking dish.
  2. In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in lemon juice and zest.
  3. Pour cream cheese mixture over the crust.
  4. Bake for 30-35 minutes, or until set. Cool completely before cutting into bars.
