Prawn and Vegetable Soup

This prawn and vegetable soup is light and flavorful, featuring tender prawns and a mix of fresh vegetables in a savory broth. It’s perfect for a healthy and satisfying meal.

INGREDIENTS

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup green beans, chopped
  • 4 cups seafood stock
  • 250g prawns, peeled and deveined
  • 1 tsp dried basil
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley

INSTRUCTIONS

  1. Heat olive oil in a pot over medium heat. Add onion and garlic, and cook until translucent.
  2. Add bell pepper and green beans, and cook for 5 minutes.
  3. Pour in seafood stock and bring to a boil.
  4. Add prawns and cook for 5 minutes, until prawns are pink and cooked through.
  5. Season with basil, salt, and black pepper.
  6. Garnish with fresh parsley before serving.
