Creamy Shrimp Bisque

This creamy shrimp bisque is rich and indulgent, featuring tender shrimp in a velvety, flavorful broth. It’s perfect for a special occasion or a cozy meal.

INGREDIENTS

  • 2 tbsp butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 2 cups shrimp stock
  • 250g shrimp, peeled and deveined
  • 1 cup heavy cream
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh chives

INSTRUCTIONS

  1. Melt butter in a pot over medium heat. Add onion and garlic, and cook until softened.
  2. Stir in diced tomatoes and shrimp stock. Bring to a boil.
  3. Add shrimp and simmer for 5-7 minutes, until shrimp are cooked.
  4. Stir in heavy cream, paprika, and thyme. Simmer for 10 minutes.
  5. Season with salt and black pepper to taste.
  6. Garnish with fresh chives before serving.
