Creamy Fish Chowder

This creamy fish chowder is rich and hearty, featuring tender fish and potatoes in a creamy, flavorful broth. It’s a comforting and filling option for any meal.

INGREDIENTS

  • 2 tbsp butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups diced potatoes
  • 4 cups fish stock
  • 300g white fish fillets, cut into chunks
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley

INSTRUCTIONS

  1. Melt butter in a pot over medium heat. Add onion and garlic, and cook until translucent.
  2. Add diced potatoes and fish stock. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes, until potatoes are tender.
  4. Add fish and cook for another 5 minutes.
  5. Stir in heavy cream and thyme. Simmer for an additional 5 minutes.
  6. Season with salt and black pepper to taste.
  7. Garnish with fresh parsley before serving.
