Chicken and Corn Soup

This creamy chicken and corn soup is a satisfying and flavorful option, blending tender chicken with sweet corn and a creamy broth. It’s perfect for a quick and comforting meal.

INGREDIENTS

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 1 cup frozen corn kernels
  • 4 cups chicken broth
  • 1 cup milk
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh chives

INSTRUCTIONS

  1. Heat olive oil in a pot over medium heat. Add onion and garlic, and sauté until translucent.
  2. Add chicken and corn, and cook for 5 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Reduce heat and stir in milk and dried thyme. Simmer for 15 minutes.
  5. Season with salt and black pepper to taste.
  6. Garnish with fresh chives before serving.
