INGREDIENTS
- 1 cup quinoa, rinsed
- 2 cups water
- 1 can (400g) black beans, drained and rinsed
- 1 red bell pepper, diced
- 1/2 cup corn kernels (fresh or frozen)
- 1/4 cup red onion, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp ground cumin
- Salt and black pepper to taste
INSTRUCTIONS
- In a saucepan, bring water to a boil. Add quinoa, reduce heat, and simmer for 15 minutes, or until quinoa is cooked and water is absorbed. Let it cool.
- In a large bowl, combine cooked quinoa, black beans, bell pepper, corn, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, cumin, salt, and black pepper.
- Pour dressing over salad and toss to combine.
