INGREDIENTS
- 1 cup red lentils, rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 cup diced tomatoes
- 1 cup chopped carrots
- 1 cup chopped potatoes
- 2 cups vegetable broth
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh cilantro for garnish
INSTRUCTIONS
- In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
- Add curry powder, cumin, and coriander, and cook for another minute.
- Stir in diced tomatoes, carrots, potatoes, and lentils. Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 25-30 minutes, or until lentils and vegetables are tender.
