These chicken and vegetable skewers are a delicious and healthy option for a summer BBQ or a quick weeknight meal. The marinade adds a flavorful touch to the tender chicken and crisp vegetables.
INGREDIENTS
- 500g chicken breast, cut into cubes
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 onion, cut into chunks
- 1 zucchini, sliced
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and black pepper to taste
- Wooden skewers, soaked in water
INSTRUCTIONS
- In a bowl, mix olive oil, lemon juice, oregano, thyme, salt, and black pepper.
- Add chicken cubes to the marinade and toss to coat. Marinate for at least 30 minutes.
- Thread chicken and vegetables onto skewers, alternating between chicken and vegetables.
- Preheat grill or grill pan over medium-high heat.
- Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender.
