This vegetable stir-fry with tofu is a quick and healthy dish, packed with colorful veggies and savory flavors. Perfect for a weeknight dinner.
INGREDIENTS
- 1 block (about 300g) firm tofu, drained and cubed
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp vegetable oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 carrots, sliced
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp hoisin sauce
- 1 tbsp sesame seeds
INSTRUCTIONS
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add tofu cubes and cook until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add sesame oil, garlic, and ginger. Stir-fry for 1 minute.
- Add bell pepper, broccoli, snap peas, and carrots. Stir-fry for 5-7 minutes, or until vegetables are tender-crisp.
- Return tofu to the skillet and add soy sauce and hoisin sauce. Stir well to coat everything evenly.
- Cook for an additional 2 minutes, then sprinkle with sesame seeds before serving.
