INGREDIENTS
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 1 cup peeled and chopped apple
INSTRUCTIONS
- Preheat oven to 180°C (350°F). Line a muffin tin with paper liners.
- In a large bowl, combine flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together melted butter, milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in chopped apple.
- Spoon batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
