These berry cheesecake bars are a delicious and easy dessert, combining a buttery graham cracker crust with creamy cheesecake and fresh berries.
INGREDIENTS
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 500g cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup mixed berries (fresh or frozen)
INSTRUCTIONS
- Preheat oven to 175°C (350°F). Grease a 9x13-inch baking pan.
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the prepared pan to form a crust.
- In a large bowl, beat cream cheese until smooth. Add sugar and beat until creamy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Spread cream cheese mixture over the crust.
- Drop berries evenly over the top, gently pressing them into the filling.
- Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
- Cool completely before cutting into bars and serving.
