INGREDIENTS
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 cup granulated sugar (for filling)
- 2 large eggs
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup all-purpose flour (for filling)
- Powdered sugar for dusting
INSTRUCTIONS
- Preheat oven to 180°C (350°F). Grease a 9x9-inch baking pan.
- For the crust, in a bowl, mix flour, sugar, and cold butter until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of the prepared pan. Bake for 15 minutes.
- For the filling, in a separate bowl, whisk together sugar, eggs, lemon juice, and flour until smooth.
- Pour the filling over the pre-baked crust.
- Bake for 25-30 minutes, or until the filling is set and the edges are lightly golden.
- Cool completely, then dust with powdered sugar before cutting into bars.
