This spicy lentil soup is hearty and flavorful, with a kick from spices. It’s perfect for a filling and warming meal.
INGREDIENTS
- 1 cup dried red lentils, rinsed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 large carrot, diced
- 1 celery stalk, diced
- 1 can diced tomatoes
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper (optional)
- 4 cups vegetable broth
- 2 tbsp olive oil
- Salt and black pepper to taste
INSTRUCTIONS
- In a large pot, heat olive oil over medium heat. Add onion, carrot, and celery. Cook until vegetables are softened.
- Add garlic, cumin, smoked paprika, turmeric, and cayenne pepper (if using). Cook for 1 minute until fragrant.
- Stir in lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes, or until lentils are tender.
